Ingredients

  • 2 cups of cooked rice
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 cup of frozen peas and carrots
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of cumin powder
  • 1/2 teaspoon of chili powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 tablespoons of vegetable oil

Instructions

  1. Heat vegetable oil in a large pan over medium heat.

  2. Add onions, bell peppers, and garlic. Sauté until onions are translucent.

  3. Stir in frozen peas and carrots. Cook for 5 minutes until vegetables are tender.

  4. Add cooked rice to the pan and mix well with the vegetables.

  5. Sprinkle smoked paprika, cumin powder, chili powder, salt, and black pepper over the rice mixture. Stir well to evenly coat the rice.

  6. Cook for another 5 minutes, stirring occasionally, until the rice is heated through and the flavors have melded together.

  7. Serve hot and enjoy!
