Ingredients

  • 2 cups cooked brown rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels, fresh or frozen
  • 1 red bell pepper, sliced
  • 1 avocado, diced
  • 1/4 cup chopped cilantro
  • 1/4 cup diced red onion
  • 1 jalapeno pepper, seeded and minced
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tsp cumin
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the cooked rice, black beans, corn, red bell pepper, avocado, cilantro, red onion, and jalapeno pepper.

  2. In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper until well combined.

  3. Pour the dressing over the veggie mixture and toss until everything is evenly coated.

  4. Divide the veggie mixture into 4 bowls.

  5. Serve and enjoy!
