Ingredients

  • 2 cups Arborio rice
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. In a large pan, heat some olive oil over medium heat. Add the chopped onion and minced garlic, cooking until soft and fragrant.

  2. Add the Arborio rice and cook for another 2 minutes, stirring constantly.

  3. Pour in the diced tomatoes and stir well. Cook for 1 minute.

  4. Gradually add the vegetable broth, 1/2 cup at a time, stirring continuously until the liquid is absorbed before adding the next 1/2 cup.

  5. Continue this process until the rice is tender and has a creamy texture. This should take about 15-20 minutes.

  6. Stir in the grated Parmesan cheese and season with salt and pepper to taste.

  7. Serve the tomato risotto hot, garnished with fresh basil leaves.
