How To Make Quick Tomato Risotto

Ingredients
- 2 cups Arborio rice
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
Instructions

In a large pan, heat some olive oil over medium heat. Add the chopped onion and minced garlic, cooking until soft and fragrant.

Add the Arborio rice and cook for another 2 minutes, stirring constantly.

Pour in the diced tomatoes and stir well. Cook for 1 minute.

Gradually add the vegetable broth, 1/2 cup at a time, stirring continuously until the liquid is absorbed before adding the next 1/2 cup.

Continue this process until the rice is tender and has a creamy texture. This should take about 15-20 minutes.

Stir in the grated Parmesan cheese and season with salt and pepper to taste.
