Ingredients

  • 2 cups cooked rice
  • 1 chicken breast, diced
  • 1 chorizo sausage, sliced
  • 1/2 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 cup frozen peas
  • 1 cup shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 1/2 teaspoon saffron threads (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat a large skillet or wok over medium-high heat. Add some oil and cook the chicken until browned. Remove and set aside.

  2. In the same skillet, add the chorizo and cook until crispy. Remove and set aside.

  3. Lower the heat to medium and sauté the onion, garlic, and red pepper until softened.

  4. Add the cooked rice to the skillet and stir-fry for a few minutes until heated through.

  5. Push the rice to one side of the skillet and add the shrimp to the other side. Cook until pink and opaque, then mix with the rice.

  6. Stir in the frozen peas, soy sauce, tomato paste, paprika, saffron threads (if using), salt, and pepper. Cook for another 2-3 minutes until everything is well combined.

  7. Sprinkle the cooked chicken and chorizo over the top of the rice mixture. Give it a quick stir to incorporate all the ingredients.

  8. Garnish with fresh parsley and serve hot.
