Ingredients

  • 2 cups cooked ham, diced
  • 1 cup artichoke hearts, drained and chopped
  • 1 lemon, zest and juice
  • 2 cups cooked basmati rice
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat.

  2. Add the diced ham and cook until lightly browned.

  3. Add the artichoke hearts and cook for an additional 2-3 minutes.

  4. Stir in the lemon zest and juice, cooking for another minute.

  5. Add the cooked basmati rice to the skillet and toss to combine all ingredients evenly.

  6. Cook for 5-7 minutes, until the pilaf is heated through.

  7. Season with salt and pepper to taste.

  8. Sprinkle with fresh parsley before serving.
