How To Make Chicken & Chorizo Quesadilla

Much like pizzas, the world is your oyster when it comes to quesadillas. Stuff them with whichever filling suits your fancy. If you’re stuck for ideas, then these quesadilla recipes are just what you need to get started on your own quesadilla party.

Serves:

Ingredients

  • 2 boneless, skinless chicken breasts, cooked and shredded
  • 1 chorizo sausage, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow onion, thinly sliced
  • 2 cups shredded cheddar cheese
  • 4 large flour tortillas
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper, to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add sliced chorizo, bell pepper, and onion. Cook until chorizo is crispy and vegetables are tender.

  2. Remove chorizo and vegetables from the skillet and set aside.

  3. In the same skillet, place one tortilla. Layer with shredded chicken, cooked chorizo, vegetable mixture, and shredded cheese.

  4. Sprinkle with chili powder, cumin, paprika, salt, and pepper. Top with another tortilla.

  5. Cook the quesadilla over medium heat until the cheese has melted and the tortillas are crispy and golden brown, about 3-4 minutes per side. Repeat with the remaining tortillas and filling.

  6. Once cooked, transfer the quesadillas to a cutting board and let them cool for a few minutes before slicing into wedges.

  7. Serve hot and enjoy!
