How To Make Baja Fresh Quesadilla Recipe
A cheesy, flavorful quesadilla filled with fresh ingredients and the perfect amount of spice.

Ingredients
- 4 large flour tortillas
- 1 cup cooked and diced chicken
- 1/2 cup black beans
- 1/2 cup corn kernels
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1/4 tsp garlic powder
- 1 1/2 cups shredded Monterey Jack cheese
- Salt and pepper to taste
- Olive oil
Instructions

Preheat a large skillet over medium heat.

In a bowl, mix together chicken, black beans, corn, red onion, cilantro, cumin, chili powder, and garlic powder.

Spread 1/4 cup of cheese on one half of each tortilla and top with 1/4 of the chicken mixture.

Fold the other half of the tortilla over the filling and press gently.

Brush olive oil on both sides of the quesadilla.

Cook each quesadilla for 2-3 minutes per side, or until cheese is melted and tortilla is golden brown.
