How To Make Baja Fresh Quesadilla Recipe

Ingredients

  • 4 large flour tortillas
  • 1 cup cooked and diced chicken
  • 1/2 cup black beans
  • 1/2 cup corn kernels
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 tsp garlic powder
  • 1 1/2 cups shredded Monterey Jack cheese
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat a large skillet over medium heat.

  2. In a bowl, mix together chicken, black beans, corn, red onion, cilantro, cumin, chili powder, and garlic powder.

  3. Spread 1/4 cup of cheese on one half of each tortilla and top with 1/4 of the chicken mixture.

  4. Fold the other half of the tortilla over the filling and press gently.

  5. Brush olive oil on both sides of the quesadilla.

  6. Cook each quesadilla for 2-3 minutes per side, or until cheese is melted and tortilla is golden brown.

  7. Serve hot and enjoy!
