  • 6 red-skinned potatoes, diced
  • 2 stalks of celery, chopped
  • 1/4 cup red onion, diced
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, bring water to a boil. Add diced potatoes and cook for about 15-20 minutes, or until they are tender but still firm.

  2. Drain the potatoes and let them cool for a few minutes.

  3. In a mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper. Mix well.

  4. Add the cooled potatoes, celery, red onion, and parsley to the bowl. Gently toss to coat everything evenly with the dressing.

  5. Refrigerate for at least 1 hour before serving to allow the flavors to meld together.

  6. Serve chilled and enjoy!
