How To Make Veggie Pasta One-Pot Recipe

Ingredients
- 8 ounces of pasta
- 2 tablespoons of olive oil
- 1 onion, sliced
- 2 cloves of garlic, minced
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup of cherry tomatoes
- 1 cup of vegetable broth
- 1 teaspoon of dried basil
- 1/2 teaspoon of dried oregano
- Salt and pepper to taste
- Grated Parmesan cheese for garnish
- Fresh basil leaves for garnish
Instructions

Cook the pasta according to package instructions until al dente. Drain and set aside.

In a large pot, heat olive oil over medium heat. Add sliced onion and minced garlic. Cook until the onion becomes translucent.

Add sliced bell pepper, zucchini, and cherry tomatoes to the pot. Cook for about 5 minutes until the vegetables start to soften.

Pour in the vegetable broth and add dried basil, dried oregano, salt, and pepper. Stir well.

Add the cooked pasta to the pot and toss everything together until the pasta is well coated with the vegetable mixture.

Cover the pot and let it simmer for about 10 minutes, allowing the flavors to meld together.

Serve the Veggie Pasta in bowls, garnished with grated Parmesan cheese and fresh basil leaves.
