How To Make Ricotta Hotcakes with Vanilla-Roasted Blood Orange

Ingredients
- 1 cup ricotta cheese
- 2 large eggs
- 1/4 cup milk
- 1/2 tsp vanilla extract
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 2 blood oranges, peeled and sliced
- 2 tbsp honey
- 1/2 tsp vanilla extract
Instructions

In a mixing bowl, combine ricotta cheese, eggs, milk, and vanilla extract. Mix well.

In another bowl, whisk together flour, sugar, baking powder, and salt.

Gradually add the dry ingredients to the ricotta mixture and stir until just combined.

Heat a non-stick skillet or griddle over medium heat and brush with a little oil or butter.

Pour 1/4 cup batter onto the skillet for each hotcake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes.

Preheat the oven to 425°F (220°C). Place the sliced blood oranges on a baking sheet lined with parchment paper.

Drizzle the oranges with honey and sprinkle with vanilla extract. Roast for 10-15 minutes until the edges are slightly caramelized.
