Serves:

Ingredients

  • 1 cup ricotta cheese
  • 2 large eggs
  • 1/4 cup milk
  • 1/2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 blood oranges, peeled and sliced
  • 2 tbsp honey
  • 1/2 tsp vanilla extract

Instructions

  1. In a mixing bowl, combine ricotta cheese, eggs, milk, and vanilla extract. Mix well.

  2. In another bowl, whisk together flour, sugar, baking powder, and salt.

  3. Gradually add the dry ingredients to the ricotta mixture and stir until just combined.

  4. Heat a non-stick skillet or griddle over medium heat and brush with a little oil or butter.
