How To Make Gnudi (Ricotta Gnocchi)

Ingredients

  • 1 ½ cups of ricotta cheese
  • ½ cup of grated Parmesan cheese
  • 1 ½ cups of all-purpose flour
  • 2 eggs
  • 1 tsp of salt
  • ½ tsp of black pepper

Instructions

  1. In a large bowl, combine the ricotta cheese, Parmesan cheese, eggs, salt, and black pepper. Mix well.

  2. Gradually add the flour, stirring until the dough comes together and starts to pull away from the sides of the bowl.

  3. Dust a clean surface with flour. Take a small amount of dough and roll it into a rope about 1 inch thick.

  4. Cut the rope into 1-inch pieces. Repeat with the remaining dough.

  5. Bring a large pot of salted water to a boil. Drop the gnudi into the boiling water and cook for about 3-4 minutes, or until they float to the surface.

  6. Remove the cooked gnudi with a slotted spoon and transfer to a serving dish.

  7. Serve with your favorite sauce, such as marinara, pesto, or brown butter sage sauce.
