Ingredients

  • 200g wild garlic leaves
  • 100g nettle leaves
  • 1 onion, diced
  • 2 potatoes, peeled and diced
  • 1 liter vegetable stock
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • Crème fraîche, for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and cook until translucent.

  2. Add potatoes and vegetable stock to the pot. Bring to a boil and let simmer until potatoes are tender.

  3. Meanwhile, wash and chop wild garlic and nettles.

  4. Once the potatoes are cooked, add the wild garlic and nettles to the pot. Cook for another 5 minutes.

  5. Use an immersion blender to puree the soup until smooth. Season with salt and pepper to taste.

  6. Serve hot with a dollop of crème fraîche on top, if desired.
