Ingredients

  • 1 lb ground beef
  • 1/2 cup uncooked long grain rice
  • 1/4 cup finely chopped onion
  • 1/4 cup breadcrumbs
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 (14.5 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 cup beef broth
  • 1 tsp Worcestershire sauce
  • 1/4 cup grated Parmesan cheese
  • Chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, combine the ground beef, rice, onion, breadcrumbs, garlic, oregano, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

  3. Shape the mixture into meatballs, about 1 inch in diameter, and place them in a baking dish.

  4. In a medium saucepan, combine the diced tomatoes, tomato sauce, beef broth, and Worcestershire sauce. Bring to a simmer over medium heat.

  5. Pour the sauce over the meatballs in the baking dish, making sure they are completely covered.

  6. Cover the dish with aluminum foil and bake for 30 minutes.

  7. Remove the foil, sprinkle the grated Parmesan cheese over the meatballs, and return to the oven for another 15 minutes, or until the meatballs are cooked through and the cheese is melted and golden.

  8. Serve the porcupine meatballs hot, garnished with chopped fresh parsley.
