How To Make Thai Coconut Soup with Turkey Meatballs

Ingredients
- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 1 stalk lemongrass, bruised
- 2 cups chicken broth
- 1 can (13.5 oz) coconut milk
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 2 tablespoons lime juice
- 1 teaspoon sugar
- 1 red bell pepper, thinly sliced
- 1 cup mushrooms, sliced
- 1/2 cup cilantro, chopped
- 1/4 cup green onions, sliced
- Salt and pepper to taste
- Lime wedges, for serving
Instructions

In a mixing bowl, combine ground turkey, breadcrumbs, minced garlic, salt, and pepper. Mix well and shape into small meatballs.

In a large pot, heat some oil over medium heat. Add the meatballs and cook until browned on all sides. Remove the meatballs and set aside.

In the same pot, add the lemongrass, chicken broth, coconut milk, fish sauce, soy sauce, lime juice, and sugar. Bring to a simmer and let it cook for 15 minutes.

Remove the lemongrass from the pot and add the red bell pepper and mushrooms. Cook for another 5 minutes.

Return the meatballs to the pot and simmer for an additional 5 minutes until cooked through.

Remove from heat and stir in cilantro and green onions. Season with salt and pepper to taste.

Serve the soup hot with lime wedges on the side.
