How To Make Spiced Koftas with Honey & Chickpeas

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients

  • 500g ground lamb
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 can (400g) chickpeas, drained and rinsed
  • 2 tbsp honey
  • 1/4 cup Greek yogurt
  • Fresh cilantro, for garnish

Instructions

  1. In a large bowl, combine the ground lamb, chopped onion, minced garlic, ground cumin, ground coriander, ground cinnamon, turmeric, cayenne pepper, salt, pepper, breadcrumbs, cilantro, and parsley. Mix well until all ingredients are evenly combined.

  2. Shape the mixture into small balls, about 2 tablespoons each, and place them on a baking sheet lined with parchment paper.

  3. Heat the olive oil in a large skillet over medium heat. Add the koftas and cook for about 4-5 minutes, turning occasionally, until browned on all sides.

  4. Remove the koftas from the skillet and set them aside.

  5. In the same skillet, add the drained and rinsed chickpeas and cook for 2-3 minutes until heated through.

  6. Add the honey to the skillet and stir well to coat the chickpeas.

  7. Return the koftas to the skillet and cook for an additional 2-3 minutes, stirring gently, to heat them through and let the flavors combine.

  8. Serve the spiced koftas with honey and chickpeas over cooked rice or with warm pita bread.

  9. Garnish with a dollop of Greek yogurt and fresh cilantro.
