  • 1 cup cooked quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup red onion, finely chopped
  • 1/4 cup red bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, mash the black beans with a fork until chunky.

  2. Stir in the cooked quinoa, breadcrumbs, red onion, red bell pepper, garlic, cilantro, cumin, chili powder, salt, and black pepper.

  3. Mix well until all ingredients are combined.

  4. Form the mixture into 4 patties, about 1/2-inch thick.

  5. Heat olive oil in a large skillet over medium heat.

  6. Cook the patties for about 4-5 minutes per side, until golden brown and heated through.

  7. Serve the quinoa black bean burgers on buns or lettuce wraps, and add your favorite toppings.
