Ingredients

  • 6 slices of bacon
  • 1 onion, diced
  • 1 bell pepper, diced
  • 4 cups of frozen hash browns
  • 1 cup of shredded cheddar cheese
  • 8 eggs
  • 1/2 cup of milk
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a large skillet, cook the bacon until crispy. Remove from skillet and crumble into pieces.

  3. In the same skillet, sauté the diced onion and bell pepper until they become tender.

  4. In a greased casserole dish, layer the frozen hash browns, crumbled bacon, sautéed onion and bell pepper, and shredded cheddar cheese.

  5. In a mixing bowl, whisk together the eggs, milk, salt, and pepper. Pour this mixture over the layers in the casserole dish.

  6. Bake in the preheated oven for 40-45 minutes, or until the eggs are set and the top is golden brown.

  7. Let cool for a few minutes before serving.
