How To Make Chicken & Chorizo Rice Pot
A delicious one-pot meal with tender chicken, spicy chorizo, and flavorful rice.
Serves:
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 boneless chicken thighs, cut into bite-sized pieces
- 1 chorizo sausage, sliced
- 1 red bell pepper, diced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sauté until fragrant.

Add the chicken and chorizo to the pot, cook until browned on all sides.

Stir in the bell pepper, rice, chicken broth, paprika, cumin, salt, and pepper. Bring to a boil.

Reduce heat to low, cover the pot, and simmer for 20-25 minutes until the rice is cooked and the liquid is absorbed.

Remove from heat and let it sit for 5 minutes before fluffing with a fork.

Serve hot, garnished with fresh parsley.
