Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 can (10 oz) green enchilada sauce
  • 1 can (4 oz) diced green chilies
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 8 flour tortillas

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a mixing bowl, combine shredded chicken, sour cream, 1/2 cup of shredded cheddar cheese, green enchilada sauce, diced green chilies, cumin, garlic powder, and salt. Mix well.

  3. Spoon about 1/4 cup of the chicken mixture onto each tortilla and roll up tightly. Place enchiladas seam side down in a greased 9×13 inch baking dish.

  4. Pour any remaining sauce over the top of the enchiladas and sprinkle with the remaining 1/2 cup of shredded cheddar cheese.

  5. Bake in the preheated oven for 25-30 minutes, or until heated through and cheese is melted.

  6. Serve hot and garnish with your favorite toppings, such as sour cream, diced tomatoes, and cilantro.
