How To Make Beef Bourguignon Cottage Pie

Ingredients
- 1.5 lbs beef chuck, cut into cubes
- 2 tbsp all-purpose flour
- 2 tbsp vegetable oil
- 1 onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup red wine
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- Salt and pepper to taste
- 4 cups mashed potatoes
Instructions

Preheat the oven to 350°F (175°C).

Toss the beef cubes with flour, salt, and pepper in a bowl until evenly coated.

Heat the vegetable oil in a large oven-safe pot over medium-high heat. Brown the beef on all sides. Remove from the pot and set aside.

In the same pot, add the diced onion, carrots, and minced garlic. Cook until softened.

Pour in the red wine, beef broth, tomato paste, and dried thyme. Stir well to combine.

Return the browned beef to the pot and bring to a simmer. Cover and transfer to the preheated oven.

Cook for 2 hours or until the beef is tender.

Remove from the oven and check the seasoning. Adjust with salt and pepper if needed.

Increase the oven temperature to 400°F (200°C).

Spread the mashed potatoes evenly over the beef mixture.

Place the pot back in the oven and bake for an additional 20-25 minutes until the potatoes are golden and crispy on top.
