Ingredients
- 300g lean pork sausage
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 1 small carrot, grated
- 1/2 zucchini, grated
- 1/4 cup bread crumbs
- 1 tbsp fresh parsley, finely chopped
- 1 tbsp fresh thyme, finely chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions

Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.

In a large bowl, combine the sausage, onion, garlic, carrot, zucchini, bread crumbs, parsley, thyme, salt, and black pepper. Mix well.

Roll out the puff pastry onto a lightly floured surface. Cut it into 4 equal rectangles.

Divide the sausage mixture into 4 portions and shape each portion into a long log. Place one log on each puff pastry rectangle.

Brush the edges of the pastry with beaten egg and fold over to encase the sausage. Press the edges to seal.

Place the rolls onto the prepared baking sheet, seam side down. Brush the tops with beaten egg.

Bake for 25-30 minutes until the pastry is golden brown and the sausage is cooked through.

Remove from the oven and let cool slightly before serving.
