Ingredients

  • 2 cups butternut squash, peeled and grated
  • 1 cup black beans, mashed
  • 1/2 cup breadcrumbs
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, combine grated butternut squash, mashed black beans, breadcrumbs, red onion, garlic, cumin, paprika, salt, and black pepper. Mix well.

  2. Form the mixture into burger patties, around 1/2 inch thick and 4 inches in diameter.

  3. Heat olive oil in a skillet over medium heat. Cook the burgers for about 5-6 minutes per side, until they are golden brown and crispy.

  4. Serve the butternut squash burgers on buns with your favorite toppings and condiments.
