How To Make Jerk Shrimp Kabobs

Fresh shrimp, juicy pineapple, and savory peppers grilled with Jamaican jerk seasoning, these shrimp kabobs are a flavorful dinner for busy week.

For The Jerk Seasoning:

  • 2tspgarlic powder
  • 2tsponion powder
  • 2tspdried thyme
  • 1tsppaprika
  • 1tspallspiceground
  • 2tspsugar
  • 2tspsalt
  • ¼tspnutmegground
  • ¼tspred pepper flakes
  • ¼tspcinnamonground
  • ½tspblack pepper
  • 2tspcayenne pepperadjust to spice preference

For The Shrimp Kabobs:

  • 1lbshrimplarge, peeled and deveined, tails removed if desired
  • 2cupspineapple chunks
  • 1red bell peppercut into 1 inch pieces
  • 1tbspolive oil
  • 1tbspparsleychopped

Instructions

Jerk Seasoning:

  1. Combine all the spices. Store in a jar or resealable bag for later use.

  2. Heat a grill or a grill pan to medium-high.

  3. Thread the shrimp, pineapple, and red pepper onto skewers.

  4. Brush the skewers with olive oil and sprinkle 2 to 3 teaspoons of jerk seasoning over both sides of the skewers.

  5. Place on the grill and cook for 3 to 4 minutes per side, or until shrimp are pink and opaque.

  6. Sprinkle with parsley and serve.

Broiler Instructions:

  1. Place the skewers on a sheet pan coated with cooking spray. Broil for 3 to 4 minutes per side or until cooked through.
