Serves:
Ingredients
- 4 thick steaks (1.5-2 inches thick)
- 1 tbsp olive oil
- Salt and pepper to taste
- Optional: your favorite steak seasoning
Instructions
-
Preheat your grill to 225°F (107°C) for indirect grilling.
-
Rub the steaks with olive oil and season generously with salt and pepper (or your favorite steak seasoning).
-
Place the steaks on the cool side of the grill, away from the direct heat.
-
Close the grill and cook the steaks for about 30-40 minutes or until the internal temperature reaches 10-15°F (6-8°C) below your desired doneness.
-
While the steaks are cooking, preheat another grill or a cast-iron skillet over high heat.
-
Once the steaks have reached the desired internal temperature, remove them from the grill and let them rest for about 10 minutes.
-
Sear the steaks on the hot grill or skillet for about 1 minute per side, or until a crust forms.
-
Remove the steaks from the heat and let them rest for an additional 5 minutes.
-
Slice and serve the steaks immediately.
