Total: 1 hour

Serves:

Ingredients

  • 4 thick steaks (1.5-2 inches thick)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional: your favorite steak seasoning

Instructions

  1. Preheat your grill to 225°F (107°C) for indirect grilling.

  2. Rub the steaks with olive oil and season generously with salt and pepper (or your favorite steak seasoning).

  3. Place the steaks on the cool side of the grill, away from the direct heat.

  4. Close the grill and cook the steaks for about 30-40 minutes or until the internal temperature reaches 10-15°F (6-8°C) below your desired doneness.

  5. While the steaks are cooking, preheat another grill or a cast-iron skillet over high heat.

  6. Once the steaks have reached the desired internal temperature, remove them from the grill and let them rest for about 10 minutes.

  7. Sear the steaks on the hot grill or skillet for about 1 minute per side, or until a crust forms.

  8. Remove the steaks from the heat and let them rest for an additional 5 minutes.

  9. Slice and serve the steaks immediately.
