Ingredients

  • 6 large eggs
  • 1 cup diced bell peppers
  • 1 cup chopped spinach
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray

Instructions

  1. Preheat the oven to 375°F (190°C). Spray a muffin tin with cooking spray.

  2. In a mixing bowl, whisk together the eggs, milk, salt, and black pepper.

  3. Divide the bell peppers, spinach, and tomatoes evenly among the muffin cups.

  4. Pour the egg mixture over the vegetables, filling each cup about 3/4 full.

  5. Sprinkle shredded cheddar cheese on top of each cup.

  6. Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the tops are golden brown.

  7. Remove from the oven and allow to cool for a few minutes before removing from the muffin tin.

  8. Serve warm and enjoy!
