How To Make Vegan Rhubarb & Custard Bake

Ingredients
- 2 cups of rhubarb, chopped
- 1/2 cup of sugar
- 1 cup of non-dairy milk
- 1/4 cup of cornstarch
- 1/4 cup of maple syrup
- 1 tsp of vanilla extract
- 1/4 tsp of ground cinnamon
- A pinch of salt
Instructions

Preheat the oven to 350°F (175°C).

In a saucepan, combine the rhubarb and sugar. Cook over medium heat until the rhubarb is soft, about 5 minutes.

In a separate bowl, whisk together the non-dairy milk, cornstarch, maple syrup, vanilla extract, cinnamon, and salt until well combined.

Pour the custard mixture over the cooked rhubarb and stir well.

Transfer the mixture to a baking dish and bake for 35-40 minutes, or until the custard is set.
