Ingredients

  • 2 cups of rhubarb, chopped
  • 1/2 cup of sugar
  • 1 cup of non-dairy milk
  • 1/4 cup of cornstarch
  • 1/4 cup of maple syrup
  • 1 tsp of vanilla extract
  • 1/4 tsp of ground cinnamon
  • A pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a saucepan, combine the rhubarb and sugar. Cook over medium heat until the rhubarb is soft, about 5 minutes.

  3. In a separate bowl, whisk together the non-dairy milk, cornstarch, maple syrup, vanilla extract, cinnamon, and salt until well combined.

  4. Pour the custard mixture over the cooked rhubarb and stir well.

  5. Transfer the mixture to a baking dish and bake for 35-40 minutes, or until the custard is set.

  6. Allow the bake to cool for a few minutes before serving. Enjoy!
