How To Make Beetroot Latkes

Ingredients

  • 2 medium-sized beetroots, grated
  • 1 small onion, grated
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/4 tsp black pepper
  • Vegetable oil, for frying

Instructions

  1. In a large bowl, combine the grated beetroot, grated onion, eggs, flour, salt, and black pepper. Mix well until everything is evenly combined.

  2. Heat enough vegetable oil in a large skillet over medium heat.

  3. Take a small handful of the beetroot mixture and shape it into a patty. Repeat with the remaining mixture.

  4. Carefully place the latkes in the hot oil and fry for about 3-4 minutes on each side, or until they are golden brown and crispy.

  5. Remove the latkes from the skillet and drain excess oil on a paper towel-lined plate.

  6. Serve the beetroot latkes hot with sour cream or applesauce.
