How To Make Beetroot Latkes

Ingredients
- 2 medium-sized beetroots, grated
- 1 small onion, grated
- 2 eggs
- 1/2 cup all-purpose flour
- 1 tsp salt
- 1/4 tsp black pepper
- Vegetable oil, for frying
Instructions

In a large bowl, combine the grated beetroot, grated onion, eggs, flour, salt, and black pepper. Mix well until everything is evenly combined.

Heat enough vegetable oil in a large skillet over medium heat.

Take a small handful of the beetroot mixture and shape it into a patty. Repeat with the remaining mixture.

Carefully place the latkes in the hot oil and fry for about 3-4 minutes on each side, or until they are golden brown and crispy.

Remove the latkes from the skillet and drain excess oil on a paper towel-lined plate.

Serve the beetroot latkes hot with sour cream or applesauce.
