  • 4 chicken breasts
  • 1 cup pomegranate seeds
  • 1/2 cup Brazil nuts, roughly chopped
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. Season the chicken breasts with salt and pepper on both sides.

  3. In a mixing bowl, combine the pomegranate seeds, Brazil nuts, olive oil, balsamic vinegar, honey, salt, and pepper.

  4. Place the seasoned chicken breasts in an oven-safe dish and spoon the pomegranate and Brazil nut mixture over the top.
