Ingredients

  • 1 cup mixed nuts (such as almonds, walnuts, and pistachios)
  • 2 tbsp honey
  • 1/2 cup pomegranate seeds
  • 1 cup Greek yogurt
  • 2 tbsp maple syrup
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Spread the mixed nuts on a baking sheet and drizzle with honey. Bake for 10 minutes, or until lightly toasted.

  2. Remove nuts from the oven and let them cool completely. Once cooled, roughly chop the nuts.

  3. In serving glasses or bowls, layer the chopped nuts, pomegranate seeds, and Greek yogurt.

  4. In a small bowl, mix together the maple syrup and vanilla extract. Drizzle this mixture over the yogurt layer.

  5. Repeat the layers until all ingredients are used, finishing with a sprinkling of chopped nuts and pomegranate seeds on top.

  6. Serve immediately and enjoy!
