How To Make Baked Eggs in Avocado Recipe

Creamy baked eggs nestled in ripe avocados, topped with crispy bacon and fresh herbs.

Ingredients

  • 2 ripe avocados, halved and pitted
  • 4 eggs
  • Salt and pepper, to taste
  • 4 slices bacon, cooked and crumbled
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Scoop out some of the avocado flesh to create a larger well for the egg.

  3. Place avocados on a baking sheet lined with parchment paper.

  4. Crack one egg into each avocado half.

  5. Season with salt and pepper.

  6. Bake for 15-20 minutes until the eggs are set to your preference.

  7. Remove from oven and sprinkle with bacon, parsley, and chives.

  8. Serve immediately.
