How To Make Spiced Aubergine Bake

- 2 large aubergines, sliced
- 2 tablespoons olive oil
- 1 teaspoon cumin powder
- 1 teaspoon paprika
- 1/2 teaspoon ground coriander
- 1/2 teaspoon turmeric
- Salt and pepper, to taste
- 1 cup breadcrumbs
- Fresh parsley, for garnish
Instructions

Preheat the oven to 375°F (190°C).

Place the sliced aubergines in a colander, sprinkle with salt, and let them sit for 15 minutes to extract excess moisture. Rinse and pat dry.

In a bowl, mix olive oil, cumin powder, paprika, ground coriander, turmeric, salt, and pepper.

Brush the aubergine slices with the spice mixture on both sides.

Arrange the aubergine slices in a single layer in a baking dish.

Sprinkle breadcrumbs evenly over the aubergines.

Bake in the preheated oven for 40-45 minutes, or until the aubergines are tender and the breadcrumbs are golden brown.
