Ingredients

  • 2 large aubergines, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • Salt and pepper, to taste
  • 1 cup breadcrumbs
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Place the sliced aubergines in a colander, sprinkle with salt, and let them sit for 15 minutes to extract excess moisture. Rinse and pat dry.

  3. In a bowl, mix olive oil, cumin powder, paprika, ground coriander, turmeric, salt, and pepper.

  4. Brush the aubergine slices with the spice mixture on both sides.

  5. Arrange the aubergine slices in a single layer in a baking dish.

  6. Sprinkle breadcrumbs evenly over the aubergines.

  7. Bake in the preheated oven for 40-45 minutes, or until the aubergines are tender and the breadcrumbs are golden brown.

  8. Remove from the oven and garnish with fresh parsley before serving.
