How To Make Lamb-stuffed Aubergines

Ingredients
- 2 large aubergines
- 500g ground lamb
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika
- Salt to taste
- Pepper to taste
- 2 tbsp olive oil
- Fresh parsley, chopped (for garnish)
Instructions

Preheat the oven to 180°C (350°F). Slice the aubergines in half lengthwise and scoop out the flesh, leaving a small border. Chop the flesh and set aside.

Heat 1 tablespoon of olive oil in a pan over medium heat. Add the onion and garlic and cook until softened.

Add the ground lamb to the pan and cook until browned. Add the chopped aubergine flesh, cumin, coriander, paprika, salt, and pepper. Cook for another 5 minutes.

Place the hollowed aubergine shells on a baking tray and brush them with olive oil. Fill the shells with the lamb mixture.

Bake in the preheated oven for 30-35 minutes, or until the aubergines are tender and the filling is cooked through.

Serve the lamb-stuffed aubergines hot, garnished with fresh parsley.
