Ingredients

  • 4 chicken breasts
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup olive oil
  • 1/4 cup butter, melted

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a shallow dish, mix breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and black pepper.

  3. Dip each chicken breast in melted butter, then coat both sides with breadcrumb mixture.

  4. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook until golden brown on both sides, about 5 minutes per side.

  5. Transfer chicken breasts to a baking dish. Top each breast with chopped artichoke hearts.

  6. Bake in the preheated oven for 25-30 minutes or until chicken is cooked through and golden brown on top.

  7. Serve hot with your favorite side dish.
