How To Make Home-style Lamb Curry

Ingredients

  • 500g lamb, cubed
  • 2 onions, finely chopped
  • 4 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, pureed
  • 2 green chilies, slit
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 2 tsp coriander powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1 cup water
  • salt to taste
  • fresh coriander leaves, for garnish

Instructions

  1. Heat oil in a large pan or pressure cooker. Add cumin seeds and let them splutter.

  2. Add chopped onions and sauté until golden brown.

  3. Add minced garlic and grated ginger. Cook for a minute until the raw aroma disappears.

  4. Add the pureed tomatoes and cook until the oil separates from the masala.

  5. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.

  6. Add the lamb and cook on high heat for 5 minutes, stirring continuously.

  7. Add water and green chilies. Give it a good mix and cover the pan or pressure cooker with a lid.

  8. If using a pan, simmer for 2 hours or until the lamb is tender. If using a pressure cooker, cook for 30 minutes on medium heat after the first whistle.

  9. Once the curry is cooked, sprinkle garam masala and garnish with fresh coriander leaves.

  10. Serve hot with steamed rice or naan bread.
