  • 8 lamb chops
  • 2 cups fresh coriander leaves, packed
  • 1/4 cup toasted pine nuts
  • 2 cloves garlic
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the grill or grill pan.

  2. Season the lamb chops with salt and pepper.

  3. Grill the lamb chops for 3-4 minutes on each side for medium-rare or until desired doneness.

  4. In a food processor, combine coriander leaves, pine nuts, garlic, Parmesan cheese, olive oil, salt, and pepper.

  5. Blend until smooth and creamy.

  6. Serve the grilled lamb chops with a generous dollop of coriander pesto on top.
