  • 1 rack of lamb
  • 2 tablespoons olive oil
  • 2 tablespoons ground cumin
  • 2 tablespoons ground coriander
  • 1 tablespoon ground paprika
  • 1 tablespoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, mix together the olive oil, cumin, coriander, paprika, turmeric, cinnamon, salt, and black pepper to make the spice rub.

  3. Place the rack of lamb in a baking dish and rub the spice mixture all over the lamb, ensuring it is evenly coated.

  4. Roast the lamb in the preheated oven for 20-25 minutes for medium-rare, or longer if desired.

  5. Remove the lamb from the oven and let it rest for 5 minutes before carving into individual chops.

  6. Serve hot and enjoy!
