How To Make Herby Baked Lamb in Tomato Sauce
Serves:
Ingredients
- 1.5 lbs lamb shoulder, cut into cubes
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 2 tbsp tomato paste
- 1 cup chicken broth
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme leaves
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
-
Preheat the oven to 350°F (180°C).
-
In a large oven-safe skillet, heat the olive oil over medium heat. Add the lamb and cook until browned on all sides. Remove the lamb from the skillet and set aside.
-
In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.
-
Add the diced tomatoes, tomato paste, chicken broth, fresh parsley, rosemary, thyme, oregano, salt, and black pepper to the skillet. Stir well to combine.
-
Return the browned lamb to the skillet and stir to coat it with the tomato sauce mixture.
-
Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Bake for 1.5 to 2 hours, or until the lamb is tender and the flavors are well combined.
-
Remove from the oven and let it rest for a few minutes before serving. Serve the herby baked lamb with your favorite sides.
