How To Make Herby Baked Lamb in Tomato Sauce

Ingredients

  • 1.5 lbs lamb shoulder, cut into cubes
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 1 cup chicken broth
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme leaves
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 350°F (180°C).

  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the lamb and cook until browned on all sides. Remove the lamb from the skillet and set aside.

  3. In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.

  4. Add the diced tomatoes, tomato paste, chicken broth, fresh parsley, rosemary, thyme, oregano, salt, and black pepper to the skillet. Stir well to combine.

  5. Return the browned lamb to the skillet and stir to coat it with the tomato sauce mixture.

  6. Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Bake for 1.5 to 2 hours, or until the lamb is tender and the flavors are well combined.

  7. Remove from the oven and let it rest for a few minutes before serving. Serve the herby baked lamb with your favorite sides.
