How To Make Couscous with Pine Nuts, Coriander & Raisins

Ingredients
- 1 cup couscous
- 1 1/4 cups vegetable broth
- 1/4 cup pine nuts
- 1/4 cup raisins
- 1/4 cup chopped fresh coriander
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions

In a saucepan, bring the vegetable broth to a boil. Add the couscous and remove from heat. Cover and let it sit for 5 minutes.

Fluff the couscous with a fork to separate the grains.

In a small skillet, heat the olive oil over medium heat. Add the pine nuts and toast until golden brown, stirring frequently.

Add the toasted pine nuts, raisins, chopped coriander, salt, and black pepper to the couscous. Stir well to combine.
