  • 2 cups cooked chickpeas
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves of garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups vegetable broth
  • 1 cup diced tomatoes
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large pot, heat some oil over medium heat. Add the diced onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.

  2. Add the minced garlic, cumin, paprika, turmeric, and cayenne pepper to the pot. Stir well to coat the vegetables with the spices.

  3. Pour in the vegetable broth and diced tomatoes. Bring the soup to a boil, then reduce heat and let it simmer for 20 minutes.

  4. Add the cooked chickpeas to the pot and simmer for another 5 minutes. Season with salt and pepper to taste.

  5. Serve the chickpea soup hot, garnished with fresh cilantro.
