Ingredients

  • 1 lb lamb stew meat, cut into chunks
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 cup pearl barley
  • 8 cups beef broth
  • 1 bay leaf
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the lamb and cook until browned on all sides.

  2. Add the onion, carrots, and celery to the pot and cook for 5 minutes, until slightly softened.

  3. Add the barley, beef broth, and bay leaf to the pot. Bring to a boil, then reduce heat to low and simmer for 2 hours, or until the lamb is tender and the barley is cooked through.

  4. Season with salt and pepper to taste.

  5. Serve hot and enjoy!
