How To Make Lamb & Apricot Stew

Ingredients
- 1.5 pounds of lamb, cut into cubes
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1/2 teaspoon of ground cinnamon
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 cup of dried apricots
- 4 cups of beef or vegetable broth
- 1 tablespoon of honey
- 2 tablespoons of chopped fresh parsley (for garnish)
Instructions

In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.

Add the lamb cubes to the pot and cook until browned on all sides.

Add the cumin, coriander, cinnamon, salt, and black pepper to the pot and stir to coat the lamb with the spices.

Add the dried apricots and broth to the pot. Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, or until the lamb is tender.

Stir in the honey and cook for an additional 5 minutes.

Serve the stew in bowls, garnished with chopped fresh parsley.
