How To Make Tarragon Lemon Roasted Vegetables Recipe

Ingredients

  • 2 cups of diced carrots
  • 2 cups of diced potatoes
  • 1 yellow onion, diced
  • 1 lemon, juiced and zested
  • 2 tbsp of chopped fresh tarragon
  • 2 tbsp of olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 425°F (220°C)

  2. Toss the diced vegetables and onion with olive oil, lemon juice, lemon zest, tarragon, salt and pepper in a large bowl.

  3. Spread the vegetables in a single layer on a large baking sheet.

  4. Roast the vegetables for 30 minutes, stirring occasionally until tender and slightly browned.

  5. Serve hot and enjoy!
