How To Make Tarragon Lemon Roasted Vegetables Recipe

Ingredients
- 2 cups of diced carrots
- 2 cups of diced potatoes
- 1 yellow onion, diced
- 1 lemon, juiced and zested
- 2 tbsp of chopped fresh tarragon
- 2 tbsp of olive oil
- Salt and pepper, to taste
Instructions

Preheat oven to 425°F (220°C)

Toss the diced vegetables and onion with olive oil, lemon juice, lemon zest, tarragon, salt and pepper in a large bowl.

Spread the vegetables in a single layer on a large baking sheet.

Roast the vegetables for 30 minutes, stirring occasionally until tender and slightly browned.
