How To Make Lemongrass and Carrot Soup

A comforting and flavorful soup with the brightness of lemongrass and sweetness of carrots.

Ingredients

  • 2 tbsp vegetable oil
  • 2 lemongrass stalks, bruised
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 4 cups vegetable broth
  • 4 medium carrots, peeled and chopped
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lime juice
  • 1/4 cup chopped cilantro

Instructions

  1. Heat oil in a large pot and add lemongrass, onion, garlic, and ginger. Saute for 2-3 minutes.

  2. Add vegetable broth, chopped carrots, salt, and pepper. Bring to a boil and then simmer for 20-25 minutes.

  3. Discard lemongrass stalks and puree the soup until smooth using an immersion blender.

  4. Stir in lime juice and cilantro. Adjust seasoning if necessary.
