Ingredients

  • 2 lemongrass stalks, bruised and chopped
  • 1 can of coconut milk
  • 2 cups of vegetable broth
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 tsp of ginger, grated
  • 1 red chili, sliced
  • 2 tbsp of fish sauce
  • 1 tbsp of soy sauce
  • 1 tbsp of brown sugar
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro, chopped for garnish

Instructions

  1. In a pot, sauté onion, garlic, ginger, and chili until fragrant.

  2. Pour in the coconut milk, vegetable broth, and lemongrass. Bring to a boil.

  3. Add the fish sauce, soy sauce, brown sugar, and lime juice. Simmer for 10 minutes.

  4. Remove the lemongrass stalks and season with salt and pepper.

  5. Serve hot with chopped cilantro on top.
