Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 6 tbsp unsalted butter, chilled and cubed
  • ⅔ cup whole milk
  • 1 lb breakfast sausage
  • ¼ cup all-purpose flour
  • 3 cups whole milk
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F.

  2. In a large bowl, whisk together the flour, baking powder, and salt. Using a pastry cutter or your fingertips, work in the cold butter until the mixture resembles coarse crumbs.

  3. Pour in the milk, stirring until the mixture forms a sticky dough.

  4. Turn the dough out onto a floured surface and knead briefly. Pat and shape the dough into a circle about ½ inch thick. Using a biscuit cutter, cut out 8 rounds and transfer them to a baking sheet.

  5. Bake for 12-15 minutes, or until golden brown.

  6. While the biscuits are baking, cook the sausage in a large skillet over medium-high heat until browned and crumbly.

  7. Sprinkle the flour over the sausage and stir to combine. Cook for another minute.

  8. Slowly pour in the milk, whisking constantly to prevent lumps.

  9. Cook over medium heat until the gravy thickens and comes to a simmer. Season with salt and pepper to taste.

  10. Serve the biscuits with a generous ladle of sausage gravy on top.
