Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium zucchini, diced
  • 1 14 oz can diced tomatoes
  • 6 cups chicken or vegetable broth
  • 2 cups chopped kale
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional toppings: diced avocado and chopped parsley

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic and cook until softened.

  2. Add in carrots, celery and zucchini and cook for 5 minutes.

  3. Pour in canned tomatoes and broth. Bring to a boil and reduce to a simmer.

  4. Add in kale, salt and pepper. Simmer for 15-20 minutes.

  5. Serve hot and top with diced avocado and parsley if desired.
