Ingredients

  • 4 cups of kale, finely shredded
  • 2 peaches, sliced
  • 1/4 cup of poppy seeds
  • 1/4 cup of sliced almonds
  • 1/4 cup of dried cranberries
  • 1/4 cup of extra-virgin olive oil
  • 2 tablespoons of apple cider vinegar
  • 1 tablespoon of honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the kale, peaches, poppy seeds, almonds, and cranberries.

  2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper.

  3. Pour the dressing over the kale mixture and toss until well coated.

  4. Let the salad sit for 5 minutes to allow the flavors to meld together.

  5. Serve the kale, peach, and poppy seed slaw chilled.
