How To Make Veggie Chilli

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 carrots, diced
  • 1 zucchini, diced
  • 1 can (400g) diced tomatoes
  • 1 can (400g) kidney beans, rinsed and drained
  • 1 can (400g) black beans, rinsed and drained
  • 1 cup vegetable broth
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, diced avocado

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until translucent.

  2. Add the bell peppers, carrots, and zucchini. Cook for 5-7 minutes, until the vegetables start to soften.

  3. Add the diced tomatoes, kidney beans, black beans, vegetable broth, chili powder, cumin, paprika, oregano, salt, and pepper. Stir well to combine.

  4. Bring the mixture to a simmer and let it cook for 30-35 minutes, stirring occasionally.

  5. Taste and adjust the seasonings if needed.

  6. Serve the veggie chilli hot, topped with shredded cheese, sour cream, and diced avocado, if desired.
