How To Make Chickpea Fajitas

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Serves:

Ingredients

  • 2 cans (15 oz each) of chickpeas, drained and rinsed
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 tablespoon of chili powder
  • 1 teaspoon of cumin
  • 1/2 teaspoon of paprika
  • Salt and pepper to taste
  • 8 small flour tortillas
  • Optional toppings: salsa, sour cream, avocado, cilantro

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced bell pepper, onion, and minced garlic. Cook until vegetables are tender, about 5 minutes.

  2. Add the chickpeas to the skillet and sprinkle with chili powder, cumin, paprika, salt, and pepper. Stir well to coat the chickpeas and vegetables in the spices. Cook for an additional 5 minutes, until chickpeas are heated through.

  3. Warm the tortillas in a separate skillet or in the microwave.

  4. To serve, spoon the chickpea mixture onto the center of each tortilla. Top with desired toppings, such as salsa, sour cream, avocado, and cilantro.

  5. Roll up the tortilla, tucking in the sides as you go. Serve immediately.
