Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until fragrant.

  2. Add carrots, potatoes, zucchini, and red bell pepper. Cook for 5 minutes, stirring occasionally.

  3. Stir in diced tomatoes, vegetable broth, dried thyme, and dried rosemary. Season with salt and pepper.

  4. Bring the stew to a boil, then reduce heat and simmer for 20 minutes, or until vegetables are tender.

  5. Serve hot and enjoy!
