How To Make Vegetable Stew

Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions

Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until fragrant.

Add carrots, potatoes, zucchini, and red bell pepper. Cook for 5 minutes, stirring occasionally.

Stir in diced tomatoes, vegetable broth, dried thyme, and dried rosemary. Season with salt and pepper.

Bring the stew to a boil, then reduce heat and simmer for 20 minutes, or until vegetables are tender.
